To Make Rolls Put half a pound of butter into a pint of milk melt it over the fire, when the butter is melted take the butter from the milk, make the milk of a proper thickness with cold milk, put in 3 large spoonsfuls of good yeast the butter that was skimed off, put in again with 4 eggs well beat then put it all into a half peck of flower and mix it as you would bread let it lay by the fire to [illegible] for one hour. Make it into what shape you please half an hour will bake a common sized roll. Spunge Biscuits Take the white of three eggs beat to a froth with fine pounded sugar & flower in equal quantities the sugar to be beat well with the yolks of three eggs for ten minutes after which put to the both of the white, & lastly add the flower very gently. Lemon Biscuits Beat the white of 3 eggs to a strong froth then put the rind of 2 lemons grated & the weight of the 3 eggs in pounded sugar then add six ounces of well dried flower very gentle and bake them as the other Ratafia Cakes 1/2 lb treble refined sugar beat and sift it fine the white of one egg beat quite to a froth mix your sugar & froth well together, grate in the rind of one lemon, blanch & beat an oz of bitter almonds & mix them with the above. Take a sheet of writing paper out it with glazing stone & lay it on a sheet of tin. Take a spoon & drop your cake upon it. mind them in the oven for a new minutes will bake them.
