Mock Turtle Soup - Mrs [Garker?] Take three cowsheels, cut it from the bone in midling peices put it in a stew pan with four pints of water 5 anchovies, a peice of Butter, a little salt cayenne pepper, three blades of mace, six cloves, some lemon very finely cut, the green of 3 leeks, parsley and lemon thyme stew those very softly for two hours, then cut two pound of lean veel in peices, fry it a light Brown and put it to the rest with the juice of two lemons and two gills of Maderia, let it stew two hours more send it to table with forcemeat balls and hard Eggs. Irish Butter Take half an ounce of Isingglass, boil it in water till dissolved then strain it, and add a pint of cream and the whites of two Eggs, a little more water, & sugar to your taste; let it boil a quarter of an hour, and stir it all the time let it stand till it is nearly cold before you put it over the sweetmeats which may be plumbs or apricots in a glass To Make Yale Cakes Take 2 lb of flour, 1 lb of currants 1 lb of loaf sugar & 1 lb of butter melted before the fire & a little cinnamon if you like 16 oz to the pound mix all.
