No 2 Orange Wine. Mrs Bradshaw To six Gallons of water put 15 lbs of Lump sugar boil your sugar & water together for half an hour, when it boils put in the whites of six Eggs well beat to clarify it and skim it clean as long as any will rise put it in a tub till it is cold, then put in the rinds & juice of 50 oranges nicely pared with 6 spoonsfuls of good yeast, let it work for 3 days in the tub, then barrel it & put a quart of white wine, & a pint of Brandy into it stop it close with clay if it is fine bottle it in six weeks NB some put 8 oranges & one Lemon with 3 pounds of Lump sugar to every Gal & leave our of the wine & Brandy. Tea Biscuits 1 lb of Flour as much finely powdered Ammonia as will lay on a shilling mixed with the flour, 3 ounce sifted sugar 3 oz of Butter melted in a little new milk the milk to be only warm work it well together to a stiff paste, make them the size & thickness of your finger, they must be cut with a knife on all sides, & baked twice in a moderate oven.
