in a very slow oven, they may be made of any kind of fruit that is ripe. To Stew [Winesours?] Mrs Wales To very pound of fruit 7 ozs of Loaf sugar sifted til the jar with double bladders, boil them an hour, in a pan of water they must not be opened till wanted. 1 Drachm of the Oil of Lemonful, 1 oz of Spirits of wine, shake the bottle till thorougly incorporated the above gives a pleasant taste to cheesecakes. Lemon Spunge - 2 oz of Isinglass dissolved in water the juice of 10 lemons, & the rind of 2, near a lb of sugar beat very fine, boil them together 10 minuets, when nearly cold add the whites of two Eggs, whisk them to a strong froth, whisk all together till it is all quite white & lights like a spunge, put it into the mould before it comes stiff, this quantity will fill a great mould. Cranberry Jelly - Mrs D Hutton Take 1 oz Isinglass boil it in half a pint of water till it is quite dissolved put some cranberries bruised with a little bit of the liquor which is in the jar with them put them into a pan on the fire and draw out all the juices & when that is done, add 1 lb or sugar boil it - it the same as orange jelly.
