Lemon pudding. Miss Wood Boil the rind of a lemon very soft. beat it in a marble morter with the juice and put to it some bread grated very fine. a quarter of a pound of sugar and the yolks of four eggs, mix them well together. lay a good puff paste round the dish edge. Bake it half an hour. Spinach Green Take the necessary quantity of spinach pound it well and squeeze the juice through a cloth, put it in a pan on a strong fire, stir it well with a spoon, and as soon as you see it look curdy take it off the fire and drain the liquor through a silk sieve, what remains on the sieve is the colour. Orange or Lemon Flummery Steep 2 oz of Isinglass an hour in a pint of boiling water add to it half a pint of white wine, the juice of lemon or oranges to your taste, the peel of one Lemon the yolks of six eggs, sweeten it with fine white sugar to your taste, boil altogether and strain it into what molds you please, it is best made the day before wanted White Meringues 1 [lb?] of syrup, 6 whites of eggs, and any flavor you please. take a pound of clarified sugar, boil it to the feather and let it cool a little, in the mean time beat up the whites to a strong snow, and when the whites are ready, take a spaddle and rub the sugar on the sides of the pan, when you see it white and firm and shining put it out in sheets of paper in the desired shape, and let them be baked in a very slack oven they may be made pink by adding carmine or coucineal, observe this in all the above meringues
