Excellent puddings Mrs D'Arcy Hutton Take 2 Eggs, their weight in flour, The same in Sugar and Butter beat the Butter to a Cream, Then add The Sugar, Eggs and flour beat all together till well mixed, add The Currants just before they are put into the Oven, half an hour will bake them. The puddings should be baked in cups and served up in sweet Sauce The Oven must be rather quick. Orange Jelly Mrs D'Arcy Hutton Take one ounce and half of Isinglass and pour over it three quarters of a pint of Boiling Water and let it stand all night, also steep the rind of 2 or 3 Oranges in rather more then a pint of Juice and add The Juice of 2 Lemons, 1 lb of Sugar to be put to the Isinglass and Juice and to be boiled only a very short time. NB It is better to boil the Isinglass a short time before you add The Orange juice, as The latter should not be boiled more than a quarter of an hour. Sponge Cake Mrs D'Arcy Hutton Take 14 Eggs leaving out 4 Whites, put to them 1 1/2 lb of fine sifted Sugar, beat them together for half a hour then stir in 3/4 lb of flour that has been well dried and sifted the rind of a Lemon, half the Juice and a Glass of Rose Water, butter and sugar your Molds half fill the Tins and bake them in a moderate Oven. NB The Oven door not to be opened for 3/4 of an hour and do not move the cake but put it on the middle shelf. The cake is equally good without either Spring or Rose Water. Furniture Oil 2 Quarts of Lineseed Oil 1 Quart of Spirits of Turpentine 1 Gill of Vinegar 2 oz Spirits of Salt The above put into a stone Bottle. It will be ready for use in a week.
