To stew Haddocks - Mrs Robinson Take the head & fins off the Haddocks & set them on with a little water an onion stuck with cloves and a little mace strain the liquor thicken it with Butter & flour add little lemon pickle or the juice Lemon & a little anchovy fry the Haddocks a nice brown let them drain a few minutes and stew them for a bout ten minutes in the gravy Bread Pudding Mrs. Yorke old white bread grated very fine add milk put it into the oven till well heated, beat it well till it becomes like pine butter, let it stand till quite cold then add 2 Eggs a little sugar beat all together put pench plums or any fruit you perfer, then boil, the excellence of this pudding depends on beating the batter well & not added the Eggs till quite cold - Lemon Puffs excellent one lb & a quarter of fine loaf sugar beat & sifted grate the rind of 2 lemons & mix well with the sugar beat the whites of 3 eggs very well put altogether & beat them one hour & a quarter then drop them on paper & set them in a moderate oven keep them on the paper till cold A pritty Top dish for 2nd course - Mrs. C - Lay the caul of a leg of veal in a potting pot lay thin slices of Bacon & laryers of forcemeat lay a layer of each till the pot is covered with the caul to the top over with the yolk of an egg bake it an hour in a slow oven serve it with gravey and mushrooms if you please
