Ginger Wine To ten gallons of water (wine measure) add twenty pounds of loaf sugar & one pound of Ginger bruised; boil these for twenty minutes, taking off the scum as it rises - put it into an open vessel till it be new milk warm, then pour it into your Cask with nearly a pound of fresh yeast. When it has done working add the juice of 18 Lemons & the same quantity of Seville oranges, or (if oranges cannot be had) the juice of 30 Lemons without two more lbs of sugar. The peck of the fruit must be put into the cask 3 lbs Raisins & 3 pints of the best Brandy must be added. The cask is not to be bunged up till it has done working at which time add 1/2 oz of Isinglass. It ought to stand 2 Months at least before it is bottled. For smaller Quantities Water - 6 Gallons Sugar - 12 lbs Acid - 10 Lemons & 10 oranges or 18 Lemons. Sugar added - 1/4 lbs.
