Raisen Wine Mrs Wray Laybum Eight stone of Mulaga Raisins, put them into a Cask without pulling them from the stalks, only seperate the lumps - to this quantity, put 18 Gallons of soft water (wine measure) stir it well up with a strong stone of Smyrna Currants, Close the Bung hole & cover it with clay worked in Boyan - let it stand till the latter end of February or early in March then bottle it - this quantity is for 36 Gallons Cask, keep the Raisins in the Cask till the next year which should be as soon after the wine is drain off as convenient as the fermatation will be less & the wine stronger & sweeter - the wine must drain off in small quantities only as long as it runs clear if cloudy it will never recover its clearness in the Bottles therefore it may be a fortnight or 3 weeks before the cask is empty - Gingerbread Cakes Take 2 lb of Treacle put it into a pan with 1/2 lb of butter warm it until the butter is melted make ready 2 lb of flour 1/2 lb of moist sugar 3 ozs of ginger 2 eggs well beaten mix all together beat it 1/2 an hour bake it in a moderate oven in small pans then take them out of the pans & put them before the fire to harden Mrs Morley
