Stewed Beef Take a bout 3 lbs of Brisket of Beef & stew it till tender in as much water as will cover it, when sufficiently tendered take out the bones, and carefully skim off the fat, take a pint of liquor, put to it the third of a pint of port wine, a little walnut or mushroom Kitchup and some salt, tie up in a bit of muslin some whole pepper & mace, stew it all together for a short time, have ready some carrots & turnips boiled tender, cut in the form of dice strew them upon the Beef, putting a few into dish, Truffles or Morels to be added, then send it hot upon the table Finger Biscuits 10 eggs, beat the whites in a copper pan made warm untill quite stiff, then mix the yolks & 10 Tablespoonfulls of powdered sugar a little salt & the rind of a Lemon, with a wooden spoon the time the whites are beating, then mix the whites in very carefully, stir lightly in 8 Tablespoonfuls of fine dried Flour when mixed drop on paper and sift sugar over, bake in a moderate oven - Mrs Pits Wafers 1/2 a lb of flour 1/4 lb of powdered sugar, 2 Eggs a little Rose water, half a gill of cream, beat them well & let it stand a while and bake as thin as possible To boil Rice for Curries wash it well in salt and water pick it clean, let it boil 10 minnets, then steam it 20 minnets, let it be covered with cloths to keep in the steam, then every corn will seperate Beautifully -
