To Make red Raspberrie Cakes Take as many Raspberries as are wanted put them in a Jar & set them in Kettle of water over the fire untill all the juice will run from them, then with the Back of a spoon pulp it through a fine seive & to every pound of fruit so done add one lb of fine sugar sifted & the whites of two Eggs beat all together for an hour with a large wooden spoon while it is quite light & stiff then drop it with a tea spoon upon writing paper, to dry in a moderate oven - French Pancakes - 8 Eggs yolks and whites beat seperate one pint of cream, beat to a froth, then mix all together take a tea cupfull of the mixture for each pancake put some butter into the pan first before the mixture fry'd a nice Brown - A nice way of dressing under Beef Chop the meat small with some salt, pepper, and onions, to which add some rich gravey; with this mixture fill some saucers or moulds 3 parts full and fill them up with well mashed patatoes - Brown them before the fire - An excellent mode of Dressing Beef Hang 3 ribs 3 or 4 days; take out the bones, from the whole length, sprinkle the meat with salt, roll it light and roast it. nothing can look nicer. The above done with spices, &c and Baked as Hunters Beef -
