Stew Pears - Mrs. Readspan Put your Pears into cold water & just give them a scald, then throw them n a Bason of cold water peel & if large half your pear. put them into a stew pan & nearly cover them with water, to every large pear put an ounce of good loaf sugar, and to every six Pears the juice & rind of one Lemon - as much bruised Cochineal as will be upon a sixpence tied in a muslin bag with a little cinamon or cloves if approved, they will generaly require four or five hours stewing but the softness & colour must decide that point. A part of the syrup should be enriched by boiling with extra fine sugar till it rather thickens Sand cake. German receipts. 1 lb of butter beaten to cream 1 lb of arrow root or Starch flour. 1 lb of sugar sifted - 9 eggs, 2 whites left out. After beating the butter to cream, mix the flour and sugar together, and beat a table spoonful and one egg at a time into the butter, till all is bruised - Beat and stir it all the way for the space of an hour, and bake in a quick oven -
