Cheesecakes Mrs. Lelby 6 oz of Marked Pottatoes, 6 oz of Butter, 5 oz of sugar the yolks of 8 Eggs, & white of 4, the rind & juice of 2 Lemons - the Pottatoes are boiled & mashed the sugar beat with them, the butter melted & mixed & mixed in the Lemon next, the Eggs well beat & all well beat together, half the quantity will make 3 doz of cheesecakes Exeter Cream Take the pulp of 3 large roasted apples, and sweeten it to your taste, add the whites of one or two Eggs, and beat all to a strong froth dish it up with custard - Apple Jelly Green - Mrs. Selby Take 1 lb of white sugar one pd of yorkshire Greenings pared & cored, the juice & rind of one Lemon put the sugar into a stew pan with two or 3 spoonfulls of water, & the Lemon boil it to a rich syrup, then add the apples let it simmer over a slow fire till quite in a Jam take out the rind of the Lemon and put the Jam into a mould, that has been well buttered, when stiff turn it out - Apple Jam - Miss Kirkbank Boil two ounces of ginger in a pint of water untill reduced one half add the Liquid to three pounds of apples (Pippins) stew till the apples fall and then add 3 ponds of sugar lump boil it untill firm, and put it in your mould to keep till wanted - Lump sugar -
