A French Soup A Sheeps head and pluck for a Gallon of water boil it gently till reduced to half the quantity, a small tea cup of pearl Barley) Sago is better 6 large onions, 1 carrot, 1 good Turnip a bunch of sweet herbs 2 cloves, thicken with flour & butter Boil the head &c the day before wanted, as soon as the head is boiled sufficiently to cut up into small square peices, let the rest simmer till the stock is considered good enough - you may take out what is left of the pluck & boil it down in fresh water to add to what is left at dinner of the Soup, Be careful to have all the fat taken off the stock & when heated add white wine & red catsup (curry powder if you choose) Brown it with burnt sugar these things are put in - in quantity according to take do not mix the cut up meat, add Eggs & forcemeat balls if like - Machine Cakes 1 lb of Flour, 1 lb of Loaf sugar, 6 oz of butter, 3 Eggs leaving out one white, a few drops of almonds flower or Essence of lemon, mix these ingredients together to a stiff paste, then put it to your machine & push it through and make the Cakes into any shape you choose (either a finger length or twisted &c &c Bake them in rather a quick oven, the butter worked to a cream with your hand - add a little more sugar than the quantity - Mrs. Metcalfe West Wilton - An Excelent substute for cream to eat with fruit beat the yolks of Two Eggs in a pint of new milk with two nobes of sugar white a pint of new milk, put upon a stove stir it one way till it becomes thick as cream - this does with tea - Mrs. Tayter
