Venetian Pudding Make a spunge cake in a plain tin mould the same you want to make your pudding in the cake must not be too light when your cake is cold cut in Slices not to thin lay them on a flat dish and steep them in Brandy not too long, then you must have some whipt cream, set the cream with a little Isinglass. there must be a layer of cake and cream mixed together, with a little candied Lemon till your mould is full make a good custard and put round it, orniment with any thing you like - Victoria Pictorio Pudding Equal weight of grated apples and Eggs sugar to the taste and Essence of almonds steam it one hour & serve it with arrow root sauce - Caper Pickle Miss SStoddart The Green leaves & green stalks of the leaves of the nasturteans cut small put into a jar, & cold vinegar poured over them, fill the jar with leaves &c vinegar & tie it down. This is superior to the seeds pickled in the same way when used with melted Butter they are an excellent substitute for capers, & are much more econoneical Lobster Cutlets (a superior entree) Prepare and pound with exceeding nicety, about three quarters of a pound of the flesh of a couple of fine fresh lobsters, of which one must be a hen lobster - Split the bodies and break the claws, clear the flesh from all the tough skin and shell, cut it quickly with a very sharp Knife, and pound it;p add to it when partially beaten an ounce and a half of sweet new butter, a teaspoonful of salt, and about two thirds as much of mixed mace and cayenne, with a dessertspoonful of the inside coral
