Orange Marmalade Mrs Body Hill Top Pare your oranges very thin & to every pound of fruit when whole, allow 2 lbs of loaf sugar pounded & 3 pints of soft water, cut the oranges in half; take out the pulp, & cut & the outside into very thin slices or chips, then put the chips into water; let it simmer for 2 hours, then add the juice from the pulp through a straner and gradually stir in the sugar carefully stirring it & taking off the scum whilst the whole simmers 2 hours longer, the outside rind may be uses for making curcoe. - For making Gurasoa Mrs Body Hill top 2 ounces & a quarter, of seville oranges Peel, pared very thin and a quite free from the white put it in an earthen Jar & pour over a bottle of Brandy, cover it closely down, & set it on a cool stove or a cool oven, for 15 days shaking it each day, at the experation of that time, quitly pour of the Brandy; and gradually mix with it 3/4 lb of loaf sugar and when quite dissolved, pass the Liqur through a funnel covered with Blotting paper being careful to prevent Evaperations, by covering the top of the funnel with a double cloth, cork it immediately & it will be fit for use in 3 months thou better when older Jany 31st 1849 -
