Walnut Catchup Take Green walnuts before the shell is formed, and pound them in a mortar, (or Grind them in a coal mill) then squeeze the juice out through a coarse cloth put to every Gallon of juice one pound of anchovies, one pound of Bay salt, 4 oz of Jamacia pepper, 2 oz Black Pepper, 1 oz of mace, 1 oz of cloves, 1 oz of Ginger - one stick of Horse raddish and 1 quart of port wine. then boil then all all together till reduced to half the quantity. Then put it in a pot till cold. Then Bottle it (for use) NB It should not be used before 3 Months & it will keep 5 Years not to for get Garlic & Shalots - Furniture Paste Marske Hale 1 oz of Bees wax - 1 oz of white wax cut small put into a jar - add one gill of turpentine to stand until dissolved - and 1 oz of white soap to be simmered in a gill and a half of soft water - Mix all well up together - Orange Paste for puddings Miss Lodge Lay 12 Seville oranges in water for 3 days, changing the water each day. Boil them in fresh water until quite tender, then rub them dry and cut them in halves, scrape out the pulp, leaving out the pippins, then beat the peel and pulp in a mortar separately till each is like a paste - Mix them well together adding the juice of a lemon. - To every pound of pulp add 1 lb sifted sugar, incorporate the whole together, put it in a jar and cover it with a brandy paper - When used beat up 6 eggs - 1/4 lb of sifted sugar - 1/4 lb of butter melted - add 2 spoonsfull of the above paste - Mix all well together and put it into a dish. This quantity will make a good sized pudding. 2 spoonsfull of sweet biscuits are an improvement - 20 minutes will bake it -
