To stew Golden Pippins Mrs Cumby To a pd of pippins pared & cored allow a pound of sugar, put to it a quart of water, stir it on the fire in a stew pan, let it boil and skim it very clean; then put in the pippins & let them boil very quick till they, look clear, which will be in about an two hour; they must be carefully attended & often turned in stirring & when they are enough lay them in the dish you serve them in; then squeeze the juice of a Lemon into the syrup & beat it but not to boil, strain it thro' a sieve upon the apples & when cold it will for a jelly round them An Excellent Suffle Mrs Cumby - Butter a tin, and put raisins inside, Two Table spoon fulls of Arrow root, a little sugar & butter, 1/2 a pint of thin cream 3 Eggs, the whites & yolks to be beat seperately - for a boiled pudding, boil 3 quarters of an hour A White Almond Soup Miss Louther To knuckle of veal, fowl, or any white meat, boiled down with a little mace, or other spice to your taste, let these boil, to mash, then strain off the gravey, take some of the white flesh part of the meat, rub it through a cullendar then put all into the gravey with 2 ounces of almonds beat very fine & rubbed through a cullendar, set it on the fire to thicken a little, butter worked in 3 spoonfuls of flower, then have ready a french roll crisped for the middle, and liss of bread cut long like savoy biscuts. serve all up hot -
