drain them from the water, & when they are cool squeeze each quarter to let out all the water; put them into a Marble Mortar, to be pounded very fine putting in the sugar as they are pounding, which must be well mixed while the Peels are boiling; let the Pulps be picked clean from the Skins and Seeds, & mix it with the Juice, when all the Sugar & Peels are well beat & mixed, add the Pulps & Juice with it, in a large China Bowl sufficient to mix the whole together stir it with a wooden spoon & keep it in a Pint stone jar, well tied over with a Bladder
