with just water enough to cover them let them boil slowly adding a handful of salt. When they are done (which may be known by the cracking of the skin) pour off the water, sprinkle a handful of salt over them & cover them, keeping them as close to the fire, as possible, without their burning to the bottom of the pot; in this way they should stand to steam, at least an hour; when they ought to be served in a napkin, a net is useful, but not necessary to prevent them from breaking
