To preserve cucumbers, & green melons, sweet Get the large, that will quarter that has the least seeds, the small ones whole, wipe them, put them in a jar, pour over them a strong brine cover them with a cabbage leaf, [illegible] them down, tie over them a paper, set them in the chimney corner till they become yellow; then put them over the fire in salt & water with fresh cabbage leaves, let them heat very slowly till they turn green, but not to boil; if they don't green soon, put them in fresh salt & water and set them on again, but first let the preserving pan be well scrubbed & let the salt & water be warm before you put them in; cover them as before
