stand in the liquor till they are cold then put them into cold water let them be in two days changing the water 2 or three times in the day take them out and dry them in a cloth have thin syrup with a large quantity of Ginger & lemon peel pour it over the cucumbers let them stand all night and then take the syrup from them. To pickle Mushrooms Rub them with a piece of flannel and put them into cold water boil them in milk and water with a handful of salt till they are tender then dry them in a cloth boil your vinegar with white pepper cloves and mace and put to them when it is cold
