Sponge Cake Boil 3/4 lb Loaf sugar in a quarter of a pint of water have ready the yolks of eight eggs and the whites of two, beat them a little then pour the sugar and water boiling hot on the eggs stirring them - all the time with a whisk with which you must beat them an hour, then strew in half a pound of flour well dryed and the rind of a Lemon - or a small teaspoonful of the essence of Lemon - Butter the paper -
