Scotch Cake - Eleven oz. of fresh butter one pound of Loaf sugar, one pound of eggs, one pound and a quarter of flour, one pound and quarter of Lemon and orange peel, six oz of Sweet almonds. Work the butter with the hand until it becomes a cream, then put to it the powdered sugar, and work it until it looks white and light, put to it about two of the eggs and work it for about four minutes if it becomes stiff warm it occasionally - add two more eggs and work it as before, then put
