Don Pedro Pie Cut some Cutlets, & place them at the Bottom of a Stew Pan; cover them with a little thin Stock let them simmer very gently for an hour then place them immediately in the Mould, & put the Mashed Potatoes on the top - bake one hour & a quarter & the Potatoes will then be a nice brown - Pop a knife round the Potatoe & lift up the cover to let any fat rise. (Mrs. Ellison) Snow Rice Cream Put 4 oz ground Rice in a Stew Pan, 2 oz Sugar a few drops of any essence you like with 2 oz [fresh?] Butter add 1 Quart Milk; boil from 15 to 20 minutes till it forms a thick substance but a smooth one, pour into a Mould previously oiled & serve when cold - It ought to turn out like a Jelly.
