[illegible] à la Russe Cut the Fillets of a roast Fowl into very small neat Dice, & put them on a plate with half their quantity of Mushrooms & Truffles also cut into Dice. Stir the Bèchamel or Allemande Sauce over the fire until stiffly reduced, & then throw in the Minced [chicken?]. Mix the whole well together spread it out upon a Dish about an inch thick, & put it to cool in the Larder. Next cut this mixture into small pieces the [illegible] of a common cork, & place them on an earthen Dish till cold, roll them in thin layers of Bacon, dip in some light Batter & fry in plenty of Hog's Lard. Serve very hot. Bakewell Pudding. Line a tart dist with thin Paste. Lay on it some raspberry jam, about an inch thick. Take the Yolks of 8 eggs beat up with 2 whites, 1/2 lb melted Butter, flavoured with Almonds, & 1/2 lb pounded Sugar & pour this upon the Preserve & bake in a moderate oven. N. B. The Butter must not be added to the Eggs while it is hot. The whites of the eggs should be beaten separately. This Pudding is better eaten when cold.
