Recipe for [illegible] To every 6 Gallons of water, put 12 lbs of Lump Sugar, boil it 1/2 an hour; when it begins to boil put in the whites of 6 oz of eggs well beaten to a Froth, stir it well & take off the Scum; when [illegible] warm, add a quarter of a peck of Elder Flowers picked from the Stalks in dry weather, the Juice & Peel of 6 Lemons, pared very thin, 6 lbs Raisins stoned & 4 or 5 spoonsfuls of Yeast, spread over a piece of well toasted Bread; stir it often for 4 or 5 days, put a little Isinglass in the mouth of the [Cask?] in a Muslin Bag - when it has quite done working, stop it up close, it should be bottled in 6 months, & will be fit to drink in 10 months. [Henry's?] Recipe for Claret-Cup [illegible] 1st [illegible] 1 Bottle of Claret - 1/2 Pint of Sherry - 1/2 [ditto?] Seltzer Water, the Peel of a Lemon. 6oz of Sprigs of [illegible]. 3 oz of Sprigs of Burnet - 1 or 2 ditto of Borrage & same of Verbena. Add Sugar to taste & ice it 4 hours
