Salad for 8 People (Lady [N.C.?]) [Rub?] fine the yolks of 2 hard-boiled Eggs with a little salt & Mustard to form a Paste. Pour gradually 4 tablespoonsful [oil?] & 1 1/4 Tarragon [Vinegar?] stirring the mixture [miscture?] well. [Stills?] the whites of the Eggs with 4 or 5 well Harehed Lettuces, some Chervil, Tarragon, small [illegible], Beatront & Burnet, A little powdered sugar or Pepper is a great [indulgence?] to the Salad.
