Biscuits ala [Seftore?] 4 oz grated Parmesan cheese 4 oz butter, 4 oz flour work all thoroughly together till well mixed. Roll out the paste, cut it into pieces 2 inches long and 1 inch wide and bake a light colour. Berkeley 1875 Egg Snow make a meringue mixture mould it as for meringues poach in boiling milk Serve up with a custard round in a glass dish it is a very pretty and good dish Berkeley 1875 Devilled Kidneys with their fat Take one or more kidneys from [illegible] trim a little of the fat. Cut them into 3 slices and grill them a little over a nice clear fire then spread over each the following mixture Mix on a plate some mustard, salad oil, a little chutnee, Harney Worchester and Anchovy sauce season with salt, cayenne pepper and finish griling of a nice brown colour and serve very hot.
