poor People's [Mess?] 4 lbs of bacon, 4 lbs of rice 1 cabbage & 6 carrots, 6 onions. (4/4 the whole) fed 26 persons Westphalienne Sauce Put in a stew-pan 1/2 a carrot, 1/2 an onion, a little thyme bay leaf & parsley- 4 gloves 12 peppercorns, 1/2 gill vinegar & a tablespoonful of red currant jelly. Let the whole simmer until reduces to one half then add a pint of brown sauce & allow it to simmer 15 minutes & then add a spoonful of worcester sauce. Pass it through a tammy & pour it over the meat. (Lady [Augleney?] Deviled Chicken Joint a fresh roasted [illegible] chicken. Mix a little mustard, oil, vinegar lemon juice & cayenne pepper till they become a nice thick creamy [illegible] Put this all over the joints of chicken, grill & seve with Westphalienne Sauce.
