Indian Tartlets [(Man-cook's/waldeschase /] Line a few tartlet pans with very thin puff paste & bake for use- Mince fine some chicken or game & ham or Tongue mix with gravy (good) pepper & salt, truffles & some curry powder (no parmesan cheese) fill up the tartlet pans before baking & stand them in the oven just before sending to table to brown them. [Granton?] Saddle of Mutton 2nd Day Mince finely the [illegible] without fat or skin & add a good sauce well flavored. Pat the mince [bark?] on the saddle & covered with mashed potatoes. Bake in oven & salamander over the mashed potatoes flavour mince with ketchup or worchester sauce
