Raspberry Sponge. Dissolve 3/4 oz. Isinglass in very little water. Add a pint & half of mixed new milk & cream, half pint raspberry jelly & juice 1 lemon. Whisk the whole one way lite like Sponge. Put in Earthen mould & turn it out next day. Meringues Whisk 8 eggs to strong froth; Stir in 1/2 lb fine sugar lightly flavor; sift fine loaf sugar on them & blow off all that does not stick; bake them in very slow oven, when pale brown they are done. Take them of the paper & form a hollow in the under part with spoon, dry them, fill them with cream or preserved fruit & stick two together which will form an Egg shape. To take iron stains from Marble mix spirits of vitriol & lemon juice in Equal parts. Wet the stains & when it has remained on a little while, wipe off with dry cloth.
