30 enough for one (illegible) or any dish of equal size - To Make Almond Cheese Cakes Take 4 ounces of sweet almonds blanch them and put them into cold water then beat them with some more water - put to it 4 ounces of white sugar and the yolks of 4 eggs - beat fine - [work?] it in the [Mortar?] till it becomes white and frothy - line your tins with thin paste grate sugar over them when filled and bake them in a gentle oven - Mrs Christopher (illegible) Noyeau - by Miss S. J. Carnegie A quarter of a pound of bitter almonds blanched and sliced 2 quarts strong spirits 2 lbs of single refined Sugar the juice of 2 Lemons - let it stand a week stirring it every day then pour upon it a [illegible] of boiling milk put it thro a [Gilly?] bag and Bottle it - of the thick fall to the bottom of the bottle a which it will do in a few days pour off the clear and run the thick again thro a bag - Frith Whiskey is the best -
