48 Mutton like Venison Bone a Loin of Mutton leaving the Inside, and upper flesh together. Skin it leaving the skin fast at one end - mix 2 Ounces of powder Sugar and half an Ounce of ground pepper and rub them over every part of your Mutton then cover it with the Skin and lay it in an Earthen Dish and turn it every day for 4 days in Summer and more in [winter?] - When you roast it cover it with paper, half an hour before it is done take off the paper & Skin - and Sprinkle it all over with Salt - and froth it very well - serve it with Best home venison Sauce - as a remove or Side dish Mrs. Cary Orange Jelly The juice of 6 Bitter Oranges ditto of Lemons The Rhind of the Lemons very thin cut and steeped in a Tumbler of Strong white wine - boil a pound of fine Sugar Candy weight with a Stick of Cinnamon dissolve 4 [Sticks?] of Isinglass over a slow fire and strain while hot pouring On Sugar thro it at the same time - adding the Strained juice and the wine - fill your Shape after stirring till [illegible] cold - calves [head?] Jelly - does as well as Isinglass -
