56 Beet Root Soup - from Mrs Good-Hope Take a piece of Shin or Leg of Beef about 3 or 4 pounds - Three or four roots of Beet [Shred?] some 6 [illegible] onions &c about 2 Scotch pints of water Stew well by a slow fire till reduced [nearly?] one half Strain it and let it stand till cold when used add whole rice sufficient to thicken it - boil till the rice is tender - then Serve ---
