White Currant Jelly - 71 Take as many Currants as you choose, pick them off the Stalks wash them with your hand put them in a flannel Bag and let them drop without squeezing them To every pound of refined Sugar [illegible] put one pint (mutchkin) of Juice boil till Jellied - Clarify the Sugar exactly as ordered by Mrs [illegible] Page 220 - NB [pack?] the Currants well in [illegible] [illegible] before breaking them - Rusks - Three pounds and a half of Flour - 6 ounces of Sugar - half a pound of Butter - 5 spoonfuls of yeast - Set your spunge - with a little new milk - let it stand about eight hours - Make into your dough - Then set it about two hours - Make them into little rolls. lay them on Tins let them lay about a quarter of an hour, Rub them with a little Egg. 5 minutes in a quick oven will bake them - cut them in two when cold and Set them in a slow oven to dry - The above is a [Carron?] oven, When in a Stove they require one hour instead of a quarter & half an hour instead of 5 minutes
