84 Potato Flummery Take 3 Ounces of potato flour to a [Chopin?] of Milk The flour must be mixed with a tea-cupful of the Milk Cold, the remainder of the Milk boiled and added. In adding the boiled Milk the Mixture gets so rapidly thick that it is [illegible] for one Person to pour the Milk and another to Stir the mixture and immediately put the mixture into a Shape - Mrs. [Constains?] [Quinn?] Ginger Drops with seasoning - 8 ounces of Sugar pounded and Sifted the white of an Egg 2 Teaspoonfulls of Essence of Ginger Stirred well together and dropped upon paper, Baked in a moderate Oven about 10 Minutes as Soon as they come easily off the paper, they are ready - - The above quantity makes about 3 Dozen of drops - Miss G. Carnegie Pommange or Gateau de Pommes Make a fine smooth lightly seasoned Compote de Pommes; add as much Isinglas as will make it very stiff, put it into a Shape - and serve it up cold, in a deep dish with plenty of Cream [illegible] it - N.B.
