88 Apple Jelly - Mrs [Gordon?] 4 pounds good firm Apples pare and core them 6 english pints of Water Slice the Apples into it - 4 Lemons grate them - put the water on the fire and boil it down to 3 pints Strain through a fine Search - Grate 2 1/2 pounds Sugar - boil it with the Apple Juice 15 Minutes add the Juice of the lemons and boil 5 Minutes more - Skimming it - put in Shapes - when turned out, first run a knife round the inside of the Shape - Milk Punch - /Mrs Cathcart/ 3 dozen good Lemons, 8 quarts of Rum, four lbs. single refined sugar- Pare the Lemons very thin, put the parings, sugar, and spirits together and let them remain in a close covered jar for two hours, add ten quarts of spring water, and three large nutmegs grated down; cut the Lemons and squeeze them, Take four quarts of sweet milk, put it over a clear fire, when it is very near boiling, take it off and mix all well together - cover it close and let it stand for an hour then run it thro' a bag till it is clear - Have your bottles ready, clean and dry -
