93 Apple Pudding Kensington Stew the apples very soft with sugar Cinnamon & Lemon peel - beat them smooth and add a small bit of fresh Butter - fill a [pudding?] dish half full of the Apples - make a rich Custard and pour it on the top beat the whites to a froth and lay that above the Custard - strew a little pounded Sugar over it - put it in the Oven and Bake till the Custard is firm and the whites of Eggs milky brownd a few minutes will bake it Sago Pudding Wash it well soak it in a Mutchkin of Milk till tender, beat up four Eggs Season with Cinnamon or a bit of Lemon Peel and a Glass of white wine Butter a dish and Bake it half an hour Small [Beer?] pudding Butter a Tin shape or Bason and [strew?]it with Stoned raisins - put thin slices of Stale Bread into it, then strew Sugar some minced Suet - Currants and a Scrape of nutmeg - then repeat the Bread and the other Articles by turns till the frame is 3 quarters full not pressing it down) Beat up 3 Eggs 2 will do) and mix with some [bush?]
