Good Ginger Wine - by Mrs Trail Take 20 Pint cask / 12 pints water One pound and a quarter Ginger 3 dozen of lemons 2 Dozn Oranges 12 pounds Raw Sugar 3 gallons of rectified spirit 2 pounds of fine Raisins, and One of Isinglass - part of the Skins of both the [two?] pared off and put into the Cask ---- The Ginger is to be bruised but not very fine, and put into a [illegible] Bag, and boiled in the Water till the water tastes very strongly of it X Then cool it all night the Sugar is added when quite cold then the Rinds & raisins and Spirits and the [9?] simples dissolved and put in lukewarm next day - to [illegible] [notes interleaved between previous three lines:] these [illegible] should be put first into the Cask - & the [group?] when cool [illegible] when then add more boiled water if required to fill the [cask?] 6 weeks in the Cask bunged up - + I think it is better to boil the Sugar & ginger in the Water for an hour add the juice of the fruit, & boil together half hour - Kidney Soup - sent by Robt Simpson to [Buttle?] [illegible] Take two fresh Kidneys cut in Small pieces with about a pound of lean Beef, a [little?] Mace, pepper, Salt, and four or five Cloves - when Boiled enough Strain it through a hair Search - and put the Kidneys in warm Water and clean them and then [illegible] the Soup again and keep it warm but not Boiled again. The above makes about 2 Quarts of Soup - [illegible] Pollock Thomas Some onions 2 carrot boiled with the meat, & strained out improves this soup. 1839
