103 Adelaide Cake Mrs. A Dalgliesh 2 pounds of flour 1/4 pound ground Mace half a pound of butter half a pound of Raw Sugar 2 Teaspoonfulls Carbonate of Soda dissolved in an English pint of Milk - Season it well with ground Cinnamon Cloves and Ginger to your taste - [and?] with 2 [tea?]Spoonfulls of essence of Lemon Let it stand for half an hour before the fire to rise then fire it in a moderately hot oven beat the butter to a cream then add the other things the Soda to be dissolved in a little hot milk. The rest of the milk Cold - work it moderately - Swedish Sponge Cake 20 Eggs (if large, 18) leave out half of the Whites - Whip to a stiff froth, separately, with one pound of Loaf sugar pounded, and some beat bitter almonds - (or Lemon grate) - add half a lb. of Potatoe flour, stir or whip it well, and put it into a tin shape that has been buttered, & then into the oven directly. - Oat Meal gingerbread - to 3 lbs of sifted Oat Meal, take 3 lbs of Treacle, half a lb. melted butter, 6 Eggs well beat up, Season it with one ounce ginger - Dissolve a small quantity of common Potash, mix all well together, & let it stand a night before putting it into the oven. -
