107 Recipe for a Soufflet Pudding. Cover a soufflet Dish inside with very thin puff paste, Upon it spread fresh apricot or jam to suit your taste Pour in a custard, very rich, and in the oven pop it - When nearly baked, then take it out, but mind you do not drop it Then pour above the Custard as quickly as you can, The whites of five fresh eggs, beat up together in a jam With some peel of lemon grated, & some sugar finely ground, Return it to the oven till, it's delicately browned From Mr. Carnegie's Album May 14th 1847 MLC See page 132 Apple Shape [recipe for Apple Shape crossed out] [illegible] as many apples as you think the shape will hold season them with ginger and Sugar When cold take two handfuls of spinach well washed pound it and add as much to the apples as will make them green then add half a pound of isinglass and mix it well [turn?] them into a shape and let them stand all night - [Monilynhame?] May 26th 47 - Directions for Grit gruel Put on a large tea cupful of grits with two quarts of cold water When it comes to the boil pour it off and put the same quantity of water on and again pour it off - When it boils put the same quantity of water on the third time let it boil with that for two hours slowly beat it thru a [sieve?] with a spoon, the consistency ought to be like porridge [Jane?] Mrs Flat[illegible]
