119 [illegible] duck [illegible] duck with apple sauce - in the dish- April 1862 [illegible] Pudding Half fill the mould with apples cut in slices strew sugar over them squeeze half the juice of a lemon over them and half the rind of a lemon grated. Fill up the mould with apples [illegible] [illegible] down, two of bread crumbs 1 oz of sugar and the half find of lemon grated. Mixed together and the juice of the other half lemon squeezed over at the top. 1 oz of butter cut in slices and laid on the top of that then baked for one hour. It must be sent to table in the tin in which it is baked garnished around with [illegible] [illegible] .
