121 Marmalade Pudding 1/2 lb of [illegible] 1/2 lb bread crumbs, 4 eggs, 4 spoonfuls of marmalade, steamed 4 hours [illegible] [illegible] Feb 1861 Compote [illegible] Three lbs of juicy apples cored & peeled two lbs of juicy pears do do two lbs of plums. 1/2 a lb of sweet almonds blanched and sliced [illegible] oz of butter [illegible] [illegible] [illegible] [illegible] oz of cinnamon broken up & put into a muslin bag a teaspoonful of cloves put in the bag, five lbs of sugar and all to be boiled, till the fruit is soft and [illegible] - It [illegible] takes 30 minutes.
