Strawberry or Raspberry Jelly. [WM Tudor?]. Put 12 lbs: of strawberries into a pan & pour over them 2 quarts of spring water, previously accidulated with 2 g: of Tartarie acid; let them remain 24 hours, then strain them taking care not to bruise the fruit. to each pint of clear liquor add [illegible] of loaf sugar finely powdered stir it frequently, when quite dissolved. bottle the syrup - the whole procefs must be cold. the [illegible] is to be dissolved. & poured into a mould when required for us -103' 1/2 of [Trimples?] for a giant mould - Currants do as well - Maccaroni. M.A. Palmer Stew it in broth till very tender then lay it on a sieve to drain. Grate some cheese & dissolve it in milk by stirring it about over a hot plate. till perfectly smooth & a proper thicknefs for which add a little [more?] then throw in your macaroni send it to table perfectly hot. Directions for Soups Stock.- Mifs Palmer - Take a little lean Beef [illegible]: - Veal lean - 4 lbs: - have them put at the bottom of a stew pan with a small lump of butter. a bunch of sweet herbs - 2 onions and turnips - 2 carrots [2-5?] shalots - & 2 heads of celery - to be put upon a hot charcoal fire closely covered. shake it frequently for fear
