31 He would suggest as a surety for haven, the soda mixed with the flour, that they should be passed together through a hair sieve. The following formula he has tried + found good and especially for cakes of various kinds. - Flower 1 lb - Carb Lada 1 drachma (60 gr) - Tartar Acid. 3/4 Drachma (45 gr) - a little salt + the proper quantity of water or milk, The soda + Acid to be mixed dry in the flour before adding the liquid. The following is a Delicious cake that we frequently make as above. 1 lb Flour 1/4 lb of Butter, 6 oz Sugar, 1/2 lb Curants A little nutmeg + Lemon peel, about 1/2 pint milk 60 grs soda. 45 Fortaric Acid. After mixing the Acid + Soda with the flour, rub in the butter. Dissolve the sugar int he milk, + mix all together Excellent tea cakes may be made or bread, using milk instead of water + rubbing about an ounce of butter into each 1 lb of Flour, but the Dough should be
