35 Derbyshire Pudding 1 Pint of milk 2 tablespoonsfull of flour, mix the flour by degrees with the milk and when well mixed boil it till it is thick set it by till it is quite cold. Add 1/4 lb Butter melted 1/4 lb fine sugar, a little salt, the rind of a lemon grated, 5 eggs only 3 of the whites - put paste round the edge of the disk. And when the pudding is baked put currant jelly on the top - Bath Puddings Cut 1 lb of stale bread into slices as thin as posible 3 oz Butter and into thins also flour over it a small quart of boiling milk let it stand all night. Beat it very fine and add the rind of a lemon grated or chopped very fine + eggs omitting the whites of 2 pint sugar nutmeg and [illegible] to make it altogether palatable - These Pudding must be baked in small dishes earthenware. The best about the size of mince pies. To be found up with a hot wire. 2 to carry them 2 little white sugar. Sifted over them
