Berwick Sponge Cake 3 loaves 3 cups white granulated sugar 4 " flour 1 " (large) cold water 6 eggs 1/2 lemon or extract 2 teaspoon cream tartar 1 " soda Beat eggs 2 minutes, put in sugar & beat 5 minutes more. Stir in cream tartar & 2 cups flour & beat 1 minute, dissolve soda in water & stir in. Add rest of flour & beat 1 minute, slow even Mrs. [Hinc?]
