Another brine for Beef 1/2 pint of cold water, 1 oz of moist sugar, 1 oz of bay salt, 1/4 oz of salt petre. Ginger Beer 2 gallons of water, 2 lemons, 2 lbs loaf sugar 2 oz Cream of Tartar, 2 oz of bruised ginger. Black Currant Jelly 16 oz of sugar to every pint of juice. Dutch Pudding 3 eggs, 3 spoonsful of Flour, 9 dops of lemon sweeten it with powdered loaf sugar, to your taste, beat it up 10 minutes, make it as thick as Cream. Elder Wine 1 Peck and 1/2 of Berries, 1 1/2 stone of sugar 20 Quarts of Water, boil it 3 quarters of an hour, without the sugar, and half an hour with the sugar, put in raisins as many as you please.
