Medford 1 cup sugar, 1 1/4 cups flour 1 teaspoon cream a tartar 1/2 " soda Sift twice 2 tbs. melted butter 2 eggs. Put in cup & fill in with milk. Flavor. Lay Cake. - Cream together one cupful of butter and one and one-half cupfuls powdered sugar; add one cupful sweet milk, one tablespoonful peach extract, a few drops of rose extract, and one and one-half teaspoonfuls baking powder sifted with one and one-half pints of flour. Beat light, then fold in the whipped whites of five eggs. Bake in two layers in deep jelly tins. When done, put together with a thick white icing. Ice the top and sprinkle with grated cocoanut. ORANGE CAKE. Cream 1/3 of a cup of butter, add slowly a cup of fine granulated sugar, stirring all the time. Mix 1/2 teaspoon of cream of tartar and 1/4 teaspoon of soda with 1 1/2 cups of flour; sift twice. Then break an egg into the sugar and butter and stir well together, then add a spoonful of flour and stir, then add the other egg. Stir well (not beat at all) and add alternately the flour and milk until 1/2 cup of milk is used and all the flour. Stir all together and flavor with orange. Please try and report to Kitty J. Date Cake - One cup sugar, one-half cup of molasses, one-half cup butter or lard, two-thirds cup of vinegar or cider, two eggs, one teaspoonful each of cinnamon, cloves, nutmeg and spice, one and one-half teaspoonfuls soda, one-half pound of dates stoned and chopped, and flour to mix pretty stiff. Bake in pan twelve by eight inches. This is fine; try it by all means.
